Why this works

A simple, protein-rich omelette with moderate calories and fat; generally nutrient-dense, but the added oil and salt raise the fat and sodium levels.

Eggs. Provide high-quality protein, vitamin B12 and selenium, supporting muscle maintenance and normal nerve function.

Pepper. Adds vitamin C and carotenoids, which support immune function and antioxidant intake.

Salt and oil. The tablespoon of oil increases energy and fat content, while the pinch of salt adds sodium.

Method

  1. Slice the pepper into thin strips or small dice.
  2. Heat the plain cooking oil in a small non-stick frying pan over a medium heat.
  3. Add the pepper and cook for 3-4 minutes until just softened.
  4. Season with salt and black pepper.
  5. Pour in beaten eggs and tilt the pan so they spread evenly around the pepper.
  6. Cook gently until the omelette is just set, then fold and slide onto a plate.
