Why this works

High-protein, energy-dense breakfast with a high saturated fat and sodium content from bacon, cheese and butter.

Protein-rich. Three eggs, bacon, cheese and Greek yoghurt provide a substantial amount of protein, supporting satiety and muscle repair.

Calcium source. Cheddar and Greek yoghurt contribute calcium, which supports bone health.

Sodium and saturated fat concern. Bacon and extra mature cheese make this dish relatively high in sodium and saturated fat, so it is best enjoyed occasionally if you are watching cardiovascular risk.

Method

  1. Dice the bacon and orange pepper into small pieces.

Keep the dice fairly fine and even so the bacon renders quickly and the pepper cooks at the same pace, rather than leaving larger pieces raw in the finished omelette.

  2. Heat a small frying pan over medium heat and cook the bacon until browned; add the orange pepper and cook for 2-3 minutes until softened.

Aim for the bacon to turn crisp at the edges and release its fat before the pepper goes in; if the pan is smoking, lower the heat so the bacon does not turn bitter before the pepper has time to soften.

  3. Beat the eggs with a little black pepper and a spoonful of Greek yoghurt.

Whisk just until the yolks and whites are fully combined with a pale, slightly frothy look; overbeating can make the omelette tougher instead of tender.

  4. Melt the butter in a non-stick pan, pour in the egg mixture and cook gently until just set.

Swirl the melted butter to coat the base evenly, then turn the heat down if the edges set too quickly so the middle stays softly custardy rather than rubbery.

  5. Scatter over the bacon and pepper mixture, add the cheese, then fold the omelette and cook for 30 seconds more.

Add the filling while the top is still a little glossy so the cheese can melt as you fold; if you wait until the surface is completely dry, the omelette is more likely to crack.

  6. Serve immediately with a spoonful of yoghurt on top if liked.

Serve straight away while the centre is still warm and the cheese is melting, and keep the yoghurt in a neat spoonful so it does not make the top watery.
