Why this works

A filling, protein-rich omelette that is relatively low in carbohydrate but higher in saturated fat and calories due to the cream cheese and butter.

High-quality protein. Eggs provide complete protein, supporting muscle maintenance and helping with satiety.

Vitamin C and antioxidants. Red pepper adds vitamin C and carotenoids, which support immune function and overall antioxidant intake.

Higher saturated fat. Cream cheese and butter contribute a significant amount of saturated fat, so this dish is best enjoyed in moderation if watching heart health.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).

Use the fully preheated oven so the omelette starts setting evenly as soon as it goes in, rather than spreading and overcooking at the edges. If you have an oven thermometer, check the temperature has stabilised before you begin.

  2. Finely slice the red bell pepper.

Aim for thin, even slices so the pepper softens at the same rate and doesn’t leave crunchy pieces in the finished omelette. Trim away the white inner ribs if they are very thick, as they can stay tough.

  3. Melt the butter in a small ovenproof pan and soften the pepper for 3-4 minutes.

Keep the heat at medium, not high, so the butter foams without browning and the pepper turns glossy and tender rather than catching. Stir now and then and stop when the slices look slightly collapsed and fragrant.

  4. Whisk the eggs with a pinch of salt and black pepper if using, then pour into the pan.

Whisk just until the yolks and whites are combined; overbeating can make the baked omelette airy and a little dry. Pour in while the pan is still hot enough for a gentle sizzle, but not so hot that the eggs seize immediately.

  5. Cook gently for 1-2 minutes until the edges begin to set.

Leave the mixture undisturbed so a thin set rim forms around the pan, which helps the centre stay soft in the oven. If the base is colouring quickly, lower the hob slightly rather than letting it brown.

  6. Dot the cream cheese over the surface and transfer the pan to the oven.

Distribute the cheese in small spoonfuls so it melts into pockets rather than sinking to the bottom. Work quickly when moving the pan, and use oven gloves because the handle will stay very hot.

  7. Bake for 6-8 minutes until just set, then fold and serve immediately.

Take it out as soon as the centre has a slight wobble, since it will continue to firm up from the residual heat. Folding immediately traps the creamy cheese inside, but waiting too long can make the texture rubbery.
