Why this works

A protein-rich omelette that is filling and nutrient-dense, but relatively high in saturated fat and sodium due to the bacon, cheese and added salt.

High-quality protein. Eggs, bacon and mozzarella provide a substantial amount of complete protein, which supports satiety and muscle maintenance.

Source of vitamin C and carotenoids. The orange pepper contributes vitamin C and antioxidants such as beta-carotene, which support immune function and skin health.

High sodium and saturated fat. Bacon, cheese, butter and added salt make this dish comparatively high in sodium and saturated fat, so it may not suit those limiting salt or looking after heart health.

Method

  1. Cook the bacon in a frying pan until browned and crisp, then add the orange pepper and soften for 2 minutes.

Keep the bacon over a medium heat so the fat renders before the rashers catch; it should be deep golden and crisp at the edges, while the pepper only needs enough heat to lose its raw crunch and turn slightly glossy.

  2. Beat the eggs with a pinch of salt and black pepper.

Whisk just until the eggs and seasoning are evenly combined, with no streaks of white left, and avoid overbeating or the omelette can turn tight rather than tender.

  3. Melt the butter in a clean pan and pour in the eggs.

Let the butter foam but not brown before adding the eggs; if it starts to colour, lower the heat or the omelette base may take on a nutty but slightly bitter edge.

  4. Cook over a low heat, lifting the edges as they set.

Keep the pan at a gentle heat so the underside sets slowly and stays pale golden rather than darkening too quickly, and tip the pan to let any uncooked egg flow into the gaps as you lift the edges.

  5. Add the bacon, pepper and mozzarella to one half of the omelette.

Drain any excess fat from the bacon and pepper first so the filling does not make the omelette watery, and leave a small border free so folding is easier.

  6. Fold over and cook for another minute until the cheese has melted.

Press the fold lightly with the spatula so the cheese contacts the hot filling, but do not force it or the omelette can split before the middle melts.

  7. Slide onto a plate and serve straight away.

Use a warmed plate if possible so the omelette does not cool and stiffen on contact, and serve at once while the cheese is still soft and stretchy.
