Why this works
A hearty, energy-dense dish that is relatively high in fat and salt, with a moderate protein content and modest fibre from the apple and onion.
Protein from sausages. Provides a useful amount of protein for satiety and muscle maintenance, though the exact amount depends on the sausage type.
Apple and onion provide plant compounds. Apples and onions contribute fibre, vitamin C, and protective plant compounds such as quercetin.
High sodium concern. The added salt plus sausages make this dish relatively high in sodium, which may not suit those limiting salt intake.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
- Peel and finely slice the onion, then core and slice the apple.
- Heat the olive oil in a frying pan over a medium heat, then soften the onion for 5 minutes.
- Add the apple, thyme, salt and black pepper, and cook for 2–3 minutes until just beginning to soften.
- Arrange the sausages in a baking dish and spoon the apple and onion mixture around and over them.
- Bake for 25–30 minutes, turning the sausages once, until browned and cooked through.
- Serve hot, spooning the pan juices over the top.
