Why this works

A protein-rich omelette with a relatively high fat and saturated fat content, moderate calories, and only a small amount of fibre.

High-quality protein. Eggs, mozzarella and the cream cheese provide a solid protein hit, supporting satiety and muscle maintenance.

Vitamin C and antioxidants. Orange pepper and parsley add vitamin C and carotenoids, which support immune function and help protect cells from oxidative stress.

Higher saturated fat and sodium. Butter, cheese and added salt increase saturated fat and sodium, so this is less suitable for a low-salt or heart-healthy pattern if eaten regularly.

Method

  1. Beat the eggs with black pepper.

Whisk just until the yolks and whites are fully combined, keeping a little air in the mixture so the omelette stays tender rather than rubbery. If you can, let the eggs sit for a minute after mixing so the seasoning disperses evenly.

  2. Melt a little butter in a non-stick frying pan over a medium-low heat and pour in the eggs.

The butter should foam gently without browning; if it starts to colour, lift the pan off the heat briefly before adding the eggs. Tilt the pan as you pour so the mixture spreads into a thin, even layer rather than pooling in the middle.

  3. As the omelette sets, spoon the Philadelphia Garlic & Herbs down the centre and add the mozzarella.

Wait until the edges look set and the top is still slightly glossy before adding the filling, so the centre can close around it without splitting. Keep the filling in a neat line and avoid overloading, or the omelette may tear when folded.

  4. Fold the omelette over and cook for 1 minute more until the cheese begins to melt.

Use a flexible spatula to fold in one smooth motion, then press the edge lightly to seal the cheese inside. If the heat is too high, the outside will colour before the centre softens, so keep it low and steady.

  5. Serve with quickly sautéed orange pepper on the side.

Cook the pepper just until it loses its raw crunch and turns slightly glossy, keeping a bit of bite for contrast. Take it off the heat as soon as it starts to soften so it stays bright orange rather than going limp.
