Why this works

Protein-rich and filling, but relatively high in saturated fat and sodium due to the cheeses, margarine and added salt.

High-quality protein. Eggs, cheddar and Greek yoghurt provide a solid protein boost, supporting satiety and muscle maintenance.

Calcium source. Cheddar cheese and Greek yoghurt contribute calcium for bone health, though the dish is also energy-dense.

Sodium and saturated fat concerns. Mature cheddar, salsa and added salt raise sodium, while cheese and margarine drive saturated fat upwards.

Method

  1. Crack the eggs into a bowl, then add the salt and black pepper and whisk until fully combined.

Whisk until the mixture looks pale yellow and completely uniform, with no visible strands of egg white left behind; this gives a smoother, more even omelette. Avoid overbeating so much that the eggs turn frothy, as that can make the texture less tender.

  2. Heat the margarine in a non-stick frying pan over a medium heat until melted and foaming lightly.

Keep the heat at a gentle medium rather than a fierce sizzle, and watch for the margarine to look foamy but not browned. If it starts to colour quickly, lower the heat before adding the eggs so the base does not catch.

  3. Pour in the egg mixture and let it set around the edges, gently lifting the cooked egg so the uncooked egg can flow underneath.

As the edges begin to look opaque, tilt the pan slightly and use a spatula to draw the still-runny egg towards the gaps. Stop lifting once the surface is just set but still glossy, because carrying on too long will make the omelette dry.

  4. Sprinkle over the cheddar cheese and mature cheddar cheese, then fold the omelette in half and cook for 1-2 minutes until the cheese melts.

Add the cheeses while the top is still slightly moist so they can melt evenly inside the fold. Fold in one smooth motion rather than pressing hard, which helps keep the centre soft and prevents the filling from spilling out.

  5. Stir the Greek yoghurt briefly, then spoon it over the omelette and finish with a spoonful of hot salsa on top.

Give the yoghurt a quick stir so it loosens to a spoonable consistency, then add it in small dollops to keep it cool and creamy. Spoon the salsa on last so its heat stays lively and the colours remain distinct rather than blending into the yoghurt.

  6. Slide onto a warm plate and serve straight away.

Warm the plate first if possible, as a cold plate will slow the melting cheese and dull the flavour. Transfer the omelette with a wide spatula to avoid splitting the fold and losing any filling.
