Why this works
A rich, energy-dense toastie with a good amount of fibre but high in saturated fat and sodium from the cheeses and butter.
Monounsaturated fats. Avocado provides heart-friendly monounsaturated fats plus some potassium and fibre.
Calcium and B12. Cheddar and cream cheese contribute calcium and vitamin B12, supporting bone and nerve health.
High saturated fat and sodium. The cheese, butter and bread together make this a relatively high-salt, high-saturated-fat dish.
Method
- Halve the avocado, remove the stone and mash the flesh in a bowl until mostly smooth but still a little chunky.
- Stir in the cream cheese and jalapeño slices, then season if desired.
- Butter one side of each slice of bread.
- Place the bread butter-side down in a hot frying pan and divide the avocado mixture between two slices.
- Scatter the cheese over the filling, then top with the remaining slices of bread, butter-side up.
- Cook over a medium heat for 3–4 minutes per side, pressing gently, until the bread is golden and the cheese has melted.
- Slice in half and serve straight away.
