Why this works

A high-protein, high-fat breakfast with very low carbohydrate content, but it is also relatively high in saturated fat and sodium due to the bacon, cheddar and added salt.

Protein-rich. Eggs, bacon and cheddar provide a substantial protein hit, which may help with fullness and muscle maintenance.

Calcium and B12. Cheddar and eggs contribute calcium, vitamin B12 and other B vitamins important for bone health and energy metabolism.

Higher sodium and saturated fat. Bacon, cheddar and added salt push sodium and saturated fat up, which is worth noting if you are watching blood pressure or cholesterol.

Method

  1. Cook the bacon in a frying pan over a medium heat until crisp, then remove and chop into bite-sized pieces.

Keep the heat steady so the bacon renders its fat without scorching; it should look browned and a little curled, not dark and bitter. Drain it briefly on kitchen paper so the omelette stays crisp rather than greasy.

  2. Beat the eggs with a pinch of salt and black pepper in a bowl.

Beat only until the yolks and whites are evenly combined, with no streaks of clear white left. Over-beating can make the filling a bit foamy and less tender.

  3. Melt the butter in the same pan over a low-medium heat and pour in the eggs, tilting the pan to form an even layer.

When the butter foams, swirl it to coat the base in a thin glossy film, then add the eggs straight away before it browns. If the pan is too hot, the edges will set raggedly and the centre will cook unevenly.

  4. As the omelette begins to set, scatter over the chopped bacon and grated cheddar cheese.

Leave the surface slightly soft and shiny before adding the filling; that way the toppings nestle in without sinking straight to the bottom. Scatter the bacon and cheese over one half rather than the full surface to make folding easier.

  5. Fold the omelette in half and cook for 1 minute more, until the cheese has melted and the eggs are just set.

Use a spatula to lift the far edge over in one confident motion, then lower the heat so the centre warms gently. Avoid pressing it flat, which squeezes out the filling and makes the omelette tough.

  6. Slide onto a plate and serve immediately.

Let it rest on the plate for a few seconds after sliding it out, as the residual heat finishes the centre and softens the cheese. Serve at once so the exterior stays tender rather than rubbery.
