Why this works
A rich, protein-dense omelette that is low in carbohydrate but high in saturated fat and energy from butter and cheese.
High-quality protein. Eggs and cheese provide a substantial amount of complete protein, supporting muscle maintenance and satiety.
Saturated fat is notable. Butter and cheese contribute a high proportion of saturated fat, so this is best enjoyed occasionally if watching cholesterol or heart health.
B vitamins and choline. Eggs are a useful source of choline, vitamin B12 and riboflavin, which support brain function and energy metabolism.
Method
- Beat the eggs until smooth.
Whisk only until the yolks and whites are fully combined and the colour is uniform pale yellow; overbeating traps too much air and can make the omelette bumpy rather than tender.
- Melt half the butter in a non-stick frying pan over medium heat and pour in the eggs.
Wait until the butter foams and then settles to a light nutty scent without browning, and tilt the pan so the base is evenly coated before adding the eggs to stop patchy setting.
- Cook for 1-2 minutes, gently stirring the centre until just set but still soft on top.
Use a spatula to draw the set egg from the edges towards the centre in slow sweeps, leaving a glossy, slightly runny layer on top so the finished omelette stays soft.
- Mix the gochujang with the remaining butter and spread it over one half of the omelette, then scatter over the cheese.
Warm the gochujang-butter mixture just enough to make it easily spreadable, then keep the cheese off the hottest part of the pan so it softens without turning greasy or stringy too soon.
- Fold over, cook for 30 seconds more, and slide onto a plate.
Press the folded omelette very lightly with the spatula for a moment so the cheese melds inside, but avoid overcooking or the eggs will go dry and lose their creamy texture.
