Why this works

A protein-rich, savoury dish that is relatively low in carbohydrate but high in saturated fat and sodium due to the bacon, cheese and butter.

Protein from dairy and bacon. Cottage cheese, mature cheese and bacon provide a substantial amount of protein, supporting satiety and muscle maintenance.

Vitamin C and carotenoids. Orange peppers contribute vitamin C and antioxidant carotenoids, which support immune function and skin health.

High salt and saturated fat. Bacon, mature cheese and butter make this a less heart-friendly option, with a notable sodium and saturated fat load.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).

Let the oven fully come up to temperature before the peppers go in so the filling heats evenly and the edges start to soften straight away.

  2. Halve the orange peppers and remove the seeds.

Use a sharp knife to split them cleanly through the stalk end, then scrape out every bit of white membrane as it can taste bitter and hold onto moisture.

  3. Cook the bacon until crisp, then chop it finely.

Start the bacon in a cold pan over medium heat so the fat renders gradually; turn the heat down if it starts to scorch before the slices have crisped.

  4. Mix the bacon with cottage cheese, half the grated extra mature cheese and black pepper.

Break up any large bacon pieces once chopped so the mixture distributes evenly, but let the bacon cool a little first or it can loosen the cottage cheese.

  5. Fill the pepper halves with the mixture and place in a lightly buttered baking dish.

Pack the filling in gently rather than pressing hard, which helps the boats keep their shape and stops the mixture from spilling out during baking.

  6. Top with the remaining cheese and bake for 20 minutes until the peppers are tender and the topping is golden.

Look for the pepper skins to wrinkle slightly and the filling to bubble at the edges, and if the cheese browns too quickly, loosely cover with foil for the last few minutes.

  7. Rest for 5 minutes before serving.

Leave them to stand so the filling settles and is easier to serve, as cutting immediately can make the cottage cheese run out.
