Why this works
A filling, protein-rich omelette with some vegetables, but also relatively high in saturated fat due to the butter, eggs and cream cheese.
High-quality protein. Three eggs provide complete protein, supporting satiety and muscle maintenance.
Micronutrients from vegetables. Spinach and red pepper contribute folate, vitamin A and vitamin C, which support immunity and normal cell function.
Higher saturated fat. Butter and cream cheese push saturated fat up, so this dish is best enjoyed as an occasional higher-fat meal rather than an everyday light option.
Method
- Beat the eggs in a bowl until smooth.
Whisk just until the yolks and whites are fully combined and the mixture looks pale with no streaks, as over-beating can make the omelette a little rubbery.
- Melt the butter in a frying pan over a medium heat, then add the chopped red pepper and cook for 2-3 minutes.
Keep the heat at medium rather than high so the butter foams gently without browning; the pepper should soften and take on a lightly sweet smell, not catch at the edges.
- Add the spinach and let it wilt down.
Stir only until the leaves collapse and turn a deeper green, then stop straight away so any moisture they release does not make the filling watery.
- Pour in the beaten eggs and cook gently until nearly set, then dot over the cream cheese.
Tilt the pan so the uncooked egg flows into the gaps and keep the heat low enough for the surface to stay glossy, with only a slight wobble in the centre before adding the cheese.
- Fold the omelette in half and cook for another minute before serving.
Use a spatula to lift the edge and check the underside is lightly golden before folding, and avoid pressing down hard or the filling will squeeze out.
