Why this works

A protein-rich omelette with moderate energy and relatively high saturated fat and sodium, mainly from the mozzarella, margarine and added salt.

Good protein supply. Eggs and mozzarella provide around 20 g protein per serving, supporting satiety and muscle maintenance.

Source of key micronutrients. Eggs contribute vitamin B12, vitamin D and choline, while mozzarella adds calcium and phosphorus for bone health.

Sodium and saturated fat to note. Added salt, salsa and cheese increase sodium, and mozzarella plus margarine push saturated fat fairly high for a small dish.

Method

  1. Beat the eggs with a pinch of salt and black pepper.

Whisk just until the yolks and whites are fully combined and the mixture looks even yellow, but stop before it becomes frothy so the omelette stays tender.

  2. Melt a little margarine in a non-stick pan over a medium heat and pour in the eggs.

Let the margarine foam and then subside before adding the eggs; if the pan is too hot the base will brown too quickly and the top will stay runny.

  3. Cook until just set underneath, then scatter over the mozzarella and spoon on the hot salsa.

Look for the base to turn opaque with a softly trembling centre rather than a wet sheen, and keep the toppings away from the very edge so the fold seals neatly.

  4. Fold the omelette in half and cook for 1 minute more, until the cheese has melted.

Use a spatula to lift the fold rather than pressing it down, which helps trap the heat and avoids squeezing out the filling.

  5. Slide onto a plate and serve straight away.

Slide it out as soon as the cheese looks soft and stretchy, because waiting too long will make the eggs rubbery and the salsa watery.
