Why this works

A protein-rich omelette that is very energy-dense and high in saturated fat and sodium, mainly due to the chorizo and cheese.

High protein. Eggs, cheese and chorizo provide a substantial protein boost, which supports satiety and muscle repair.

High saturated fat. Cheese and chorizo contribute a significant amount of saturated fat, so this is best eaten occasionally if you are watching cholesterol intake.

High sodium. Chorizo is typically salty, making this dish relatively high in sodium and less suitable for a low-salt diet.

Method

  1. Slice the chorizo sausages thinly and cook in a non-stick frying pan over a medium heat for 2-3 minutes until they release their oils and start to crisp. Remove and set aside, leaving a little oil in the pan.
  2. Crack the eggs into a bowl, add the milk, and season lightly with salt and black pepper if using. Whisk until well combined.
  3. Heat the pan over a low-medium heat. Pour in the egg mixture and tilt the pan so it spreads evenly.
  4. As the omelette begins to set, scatter over the cooked chorizo and grated cheese on one half.
  5. When the base is just set but the top is still slightly soft, fold the omelette in half and cook for 30-60 seconds more until the cheese melts.
  6. Slide onto a warm plate and serve immediately.
