Why this works

A satisfying, energy-dense toastie with a good protein hit, but relatively high in saturated fat and sodium due to the cheese, butter and added salt.

Vitamin C. The three peppers provide a useful amount of vitamin C and other antioxidants, which support immune function and help with iron absorption.

Calcium and protein. Mozzarella contributes calcium for bone health and a moderate amount of protein for satiety and muscle maintenance.

Salt and saturated fat. Butter, mozzarella and added salt make this a higher saturated fat and sodium choice, so portion size matters.

Method

  1. Slice the green, purple and yellow peppers into thin strips, removing the seeds and pith.
  2. Heat a little olive oil in a frying pan over medium heat and cook the peppers for 6-8 minutes until softened and lightly charred. Season with salt and black pepper, then set aside.
  3. Lay out 4 slices of bread and top two of them with the roasted peppers and sliced mozzarella.
  4. Close the sandwiches with the remaining bread slices.
  5. Butter the outsides of the sandwiches lightly, then toast in a hot dry frying pan or sandwich press for 3-4 minutes per side until golden and the cheese has melted.
  6. Serve immediately while hot and crisp.
