Why this works

A rich, energising toastie with good protein and calcium, but high in saturated fat, salt and energy.

Protein and calcium. Cheddar and bacon provide a substantial protein hit, while the cheese is also a useful source of calcium for bone health.

Vitamin C and antioxidants. Mixed peppers contribute vitamin C and carotenoids, which support immune function and add some antioxidant value.

Salt and saturated fat. Bacon, cheddar and margarine make this dish high in saturated fat and sodium, so it is best enjoyed occasionally.

Method

  1. Finely slice the mixed peppers and cut the bacon into bite-sized pieces.
  2. Melt a little margarine in a frying pan over a medium heat and cook the bacon for 4-5 minutes until starting to crisp.
  3. Add the mixed peppers and cook for 3-4 minutes more until softened. Remove from the heat and let the filling cool slightly.
  4. Lay out 4 slices of bread and divide the bacon and pepper mixture over 2 slices. Top generously with grated cheese, then sandwich with the remaining bread.
  5. Spread the outside of each toastie lightly with margarine.
  6. Cook in a toastie maker or in a dry frying pan over a medium heat, pressing lightly, for 3-4 minutes per side, until the bread is crisp and the cheese has melted.
  7. Slice and serve hot.
