Why this works

A high-energy, protein-rich breakfast that is also high in saturated fat and sodium, so best enjoyed occasionally rather than daily.

Protein-rich. Bacon, mozzarella and Greek yoghurt provide a substantial amount of protein, which may support satiety and muscle maintenance.

Calcium source. Mozzarella and Greek yoghurt contribute calcium for bone health, though the cheese also increases saturated fat.

Sodium concern. Bacon and cheese make this dish fairly salty, so it may not suit those limiting blood pressure-raising foods.

Method

  1. Cook the bacon in a frying pan over a medium heat until crisp, then transfer to a board and chop into bite-sized pieces.

Keep the heat at a steady medium so the bacon renders its fat and crisps without scorching; if the pan starts smoking, lower it slightly. The bacon should look deeply browned and feel firm rather than pale and floppy before you lift it out.

  2. Melt the butter in the same pan and soften the orange pepper for 3-4 minutes until just tender.

Let the pepper pick up the bacon drippings, but move it around so it softens evenly and does not catch at the edges. You want the pieces just turning glossy and slightly collapsed, not going mushy.

  3. Lay out two tortillas and scatter over the bacon, orange pepper and mozzarella cheese, then season lightly with black pepper.

Aim for an even layer of filling with a little space at the edge, otherwise the tortillas can split or the cheese will leak out. A light hand with the black pepper is enough because the bacon will already be salty.

  4. Top with the remaining tortillas and press down gently.

Press just enough to help the tortillas adhere, without squeezing the filling to the sides. If the top tortilla slides, leave it for a few seconds to warm and settle before turning.

  5. Cook each quesadilla in the pan for 2-3 minutes per side until golden and the mozzarella is melted through.

Keep the pan on medium so the tortillas turn crisp and golden before the cheese has time to burn. Lift a corner to check for an even toasted colour and flip when the underside is patchy golden rather than still pale.

  6. Cut into wedges and serve with Greek yoghurt on the side.

Cutting while the quesadillas are still very hot helps the cheese stay soft, but let them sit for a minute so the filling does not spill out. Serve the yoghurt cold and thick, so it contrasts nicely with the hot, crisp tortilla.

  7. Finish with a final twist of black pepper if you like.

Add the pepper at the table so its aroma stays fresh and lively rather than fading in the heat. A few turns are enough to sharpen the richness without making the quesadillas bitter.
