Why this works

High in protein and energy, but also high in saturated fat and sodium due to the sausages, cheese and added salt.

Protein-rich. Eggs, sausages and two cheeses make this a substantial source of protein, which supports satiety and muscle maintenance.

Calcium source. Mozzarella and cheddar contribute meaningful calcium for bone health, though with a higher saturated fat load.

High sodium. The added teaspoon of salt plus cured/processed sausage and cheese push sodium quite high, so this is best enjoyed occasionally if watching blood pressure.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and heat a large ovenproof frying pan over a medium heat.

Let the pan come up to temperature before you start so the frittata begins to set as soon as the eggs hit the surface; if it is only barely warm, the butter and filling will sit rather than sizzle.

  2. Slice the cooked sausages into bite-sized pieces and dice the orange pepper.

Cut the sausages into even pieces so they warm through at the same rate, and keep the pepper pieces roughly similar in size to avoid some turning mushy while others stay crisp.

  3. Melt the butter in the pan, then add the pepper and sausage and cook for 3–4 minutes until the pepper starts to soften.

Aim for the butter to foam without browning too much before the vegetables go in; if the pan is smoking, lower the heat or the sausage juices may catch and taste bitter.

  4. In a bowl, whisk the eggs with the salt and black pepper.

Whisk until the eggs are uniformly pale yellow with no obvious streaks of white, but stop before they become frothy so the baked texture stays tender rather than spongy.

  5. Stir most of the mozzarella cheese and extra mature Cheddar into the egg mixture.

Toss the cheese through just before it goes into the pan so it does not clump in one corner, and reserve enough to create a proper melted top later.

  6. Pour the egg mixture into the pan and gently lift the edges so the eggs run underneath.

Use a spatula to lift the set egg from the edge and tilt the pan slightly so the uncooked mixture can flow underneath; this helps the base cook evenly without over-browning.

  7. Cook on the hob for 2 minutes, then scatter the remaining cheese over the top and transfer the pan to the oven.

Keep the hob at a gentle heat so the underside firms without colouring too fast, and move the pan to the oven as soon as the edges are set but the centre is still visibly loose.

  8. Bake for 10–12 minutes until set in the middle and golden on top. Leave to rest for a couple of minutes before slicing and serving.

Look for a slight wobble in the very centre rather than a wet liquid surface, as it will continue to firm while resting; avoid overbaking or the eggs will turn dry and rubbery.
