Why this works
A light snack with moderate calories and fat, but relatively low fibre and only modest protein.
Black tea polyphenols. Black tea contributes antioxidant compounds, though the amount consumed in the finished snack is small.
Olive oil fat quality. Most of the fat comes from olive oil, providing predominantly unsaturated fats rather than saturated fats.
Sodium to watch. Lightly salted tortillas plus added sea salt can push the sodium up for a small portion, depending on the tortilla brand.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
- Cut the lightly salted tortillas into wedges.
- Brush lightly with olive oil if using, then arrange in a single layer on a baking tray.
- Bake for 8–10 minutes, turning once, until crisp and golden.
- Meanwhile, steep the black tea in a small splash of still water for 2 minutes, then strain and reduce the liquid in a small pan until it is very concentrated.
- Toss the warm tortilla crisps with a tiny pinch of fine sea salt and a few drops of the reduced black tea for a light savoury glaze, then serve immediately.
