Why this works

Energy-dense breakfast with moderate protein, but high in saturated fat and added sugar.

Calcium from cheese. The cheese provides a useful amount of calcium for bone health, along with some phosphorus and vitamin B12.

Added sugar from jam. Most of the sugar in this dish comes from the jam, which raises the overall sugar content quickly.

Saturated fat and salt. Cheese contributes significant saturated fat and sodium, so this is best kept as an occasional breakfast rather than an everyday choice.

Method

  1. Spread one tortilla with a thin layer of jam and sprinkle over the cheese.

Use just enough jam to coat the surface in a thin, even layer so it does not ooze out and make the tortilla slippery; leave a small border at the edge to help seal the filling in.

  2. Top with a second tortilla to make a sandwich.

Line the second tortilla up carefully before lowering it on, then press lightly from the centre outwards to remove any air pockets without squeezing the filling to the rim.

  3. Cook in a dry frying pan over a medium heat for 2-3 minutes each side, pressing gently, until the cheese has melted and the outside is crisp.

Wait until the underside is deep golden with a few darker speckles before turning, and keep the heat at medium rather than high so the tortilla crisps before the cheese catches or leaks.

  4. Cut into wedges and serve warm.

Let the quesadilla sit for a minute after cutting so the melted cheese settles slightly, which gives cleaner wedges and stops the jam from running out onto the plate.

  5. Repeat with the remaining tortillas and filling.

If making several, keep the cooked ones on a wire rack rather than stacking them, otherwise steam will soften the crisp exterior and make the tortillas turn soggy.
