Why this works
A moderate-to-high energy pancake dish with decent protein from eggs and yoghurt, but relatively refined and sugar-containing, so best as an occasional breakfast rather than an everyday lighter option.
Protein from eggs and yoghurt. Eggs and coconut Greek yoghurt provide a useful amount of protein, which supports satiety and muscle maintenance.
Low fibre from refined flour. Plain flour contributes little fibre, so this recipe is unlikely to be filling for long and is less supportive of digestive health than wholegrain alternatives.
Added sugars and saturated fat. Jam, caster sugar and coconut yoghurt increase the sugar content, while coconut-based yoghurt and margarine can add saturated fat, depending on the brands used.
Method
- Whisk the eggs, coconut Greek yoghurt and milk together in a bowl until smooth.
- Stir in the flour, caster sugar and bicarbonate of soda until you have a thick batter.
- Heat a little margarine in a frying pan over medium heat.
- Cook spoonfuls of batter for 2–3 minutes on each side until puffed and golden.
- Serve warm with jam spooned over the top.
