Why this works

A fruit-forward breakfast with moderate fibre and relatively low fat, but with a fairly high carbohydrate and sugar load from the tortillas, pear and honey.

Fibre from pear and whole grains. Pears contribute soluble and insoluble fibre, which can support bowel regularity and help with satiety.

Calcium and protein from yoghurt. Yoghurt adds some protein and calcium, supporting bone health and making the meal more filling.

Added sugar from honey. The honey increases the free sugar content without adding much fibre or protein, so this is the main nutrient to watch if managing blood glucose or overall sugar intake.

Method

  1. Slice the pear into thin wedges.
  2. Mix the yoghurt with the honey in a bowl.
  3. Lay two tortillas flat and spread the yoghurt mixture over one half of each, then add pear slices.
  4. Fold over to enclose the filling and cook in a dry pan for 2–3 minutes on each side until golden and crisp.
  5. Cut into wedges and serve warm.
