Why this works

A rich, energy-dense quesadilla that is high in protein and saturated fat, with moderate carbohydrate and relatively high sodium.

High protein from cheese and chorizo. Each serving provides a substantial amount of protein, which supports satiety and muscle repair.

Calcium from cheddar. The cheddar cheese contributes calcium, important for bone health, though it also raises saturated fat.

High sodium and saturated fat. Chorizo, cheddar and salsa can push sodium and saturated fat quite high, which may be a concern for heart health if eaten often.

Method

  1. Slice the chorizo sausages, remove the skins if needed, and fry in a dry pan over a medium heat for 3–4 minutes until the fat renders and the chorizo is lightly crisp.
  2. Lay two tortilla wraps flat and scatter cheese over one half of each wrap, then top with the cooked chorizo and a little more cheese.
  3. Fold the wraps over to form half-moons and cook in a large frying pan with a little butter over a medium heat for 2–3 minutes per side, until golden and the cheese has melted.
  4. Slice into wedges and serve immediately.
