Why this works

Energy-dense and high in protein, but also high in saturated fat and sodium due to the bacon, cheddar and butter.

Calcium and protein. Cheddar provides a good amount of calcium and protein, supporting bones and muscle maintenance.

High sodium. Bacon and cheese make this dish relatively salty, which may be a concern for blood pressure if eaten often.

Saturated fat. Cheddar, bacon and butter contribute a high saturated fat content, so this is best enjoyed occasionally.

Method

  1. Dice the bacon and cut the tomato into thin slices.

Keep the bacon pieces fairly even so they brown at the same rate, and slice the tomato thinly enough that it softens without making the filling watery.

  2. Heat a frying pan over a medium heat and cook the bacon until crisp, then set aside.

Start with a dry pan so the bacon can render its fat and crisp properly; if it begins to spit hard or darken too quickly, lower the heat a little so it does not go bitter.

  3. Lay one flour tortilla flat and scatter over half the cheese, the bacon and tomato slices, then top with the remaining cheese and a second tortilla.

Leave a small border around the edge so the filling does not squeeze out, and avoid overloading the centre or the tortillas may split when turned.

  4. Return the quesadilla to the pan and cook for 2–3 minutes on each side until the tortilla is golden and the cheese has melted.

Use a gentle, steady heat so the tortilla turns golden rather than scorched before the cheese has time to soften; press down lightly with a spatula to help the layers fuse.

  5. Cut into wedges and serve with the lime drink chilled alongside.

Use a sharp knife or pizza wheel and cut in one clean motion so the filling stays inside the wedges; chilling the drink well will make it taste sharper against the rich, salty filling.
