Why this works
A filling, energy-dense quesadilla with plenty of protein and calcium, but also high in saturated fat and sodium due to the mozzarella, butter and salsa.
Protein and calcium. Eggs and mozzarella provide a substantial protein hit plus calcium for bone health.
Vitamin C. Orange pepper is a good source of vitamin C and antioxidants, supporting immune function and iron absorption.
Sodium and saturated fat. The cheese, butter and salsa make this dish relatively high in saturated fat and sodium, so it is best enjoyed occasionally if watching heart health.
Method
- Slice the orange pepper into thin strips and beat the eggs in a bowl.
Slice the pepper into evenly sized strips so they soften at the same rate, and beat the eggs just until the yolks and whites are fully combined without making them frothy.
- Melt the butter in a frying pan over a medium heat, then add the orange pepper and cook for 3–4 minutes until just softened.
Keep the heat at medium rather than high; the butter should foam gently and turn pale golden, not brown, so the pepper sweetens without catching.
- Pour in the eggs and stir gently until softly scrambled and just set.
Use a silicone spatula to move the eggs in slow sweeps across the base of the pan, and stop while they still look slightly glossy as they will finish from the residual heat.
- Lay a tortilla in the pan, spoon the scrambled eggs and pepper over one half, then top with mozzarella cheese and a spoonful of hot salsa dip.
Spread the filling to the middle of one half only, leaving a neat border at the edge so the tortilla can seal properly and the cheese stays inside as it melts.
- Fold the tortilla over and cook for 1–2 minutes on each side until crisp and the mozzarella has melted. Serve hot, cut into wedges.
Press the folded tortilla lightly with a spatula so the underside makes full contact with the pan, and turn it only once when the base is deep golden and the cheese is visibly oozing.
