Why this works

A calorie-dense, high-fat quesadilla dish with good protein but high saturated fat and sodium, best enjoyed occasionally.

Protein and calcium. Cheese and chorizo provide a substantial protein hit, with cheese also contributing calcium for bone health.

Vitamin A and potassium. Sweet potato adds beta-carotene (vitamin A precursor) and potassium, supporting vision and normal muscle function.

Sodium and saturated fat. Chorizo and cheese make this dish high in saturated fat and salt, which may be a concern for heart health if eaten regularly.

Method

  1. Peel and dice the sweet potato into small cubes, then cook until tender. Drain any excess moisture and lightly mash or leave chunky, depending on your texture preference.
  2. Crisp the chorizo in a dry frying pan until the fat renders and the pieces are browned.
  3. Warm the tortillas in a clean pan, then spread some of the sauce over one half of each tortilla.
  4. Top with sweet potato, chorizo and cheese, then fold over to form a half-moon.
  5. Cook the quesadillas in the pan over a medium heat for 2–3 minutes on each side until golden and the cheese has melted.
  6. Slice and serve immediately with the remaining sauce for dipping.
