Why this works

A very energy-dense, high-saturated-fat dish with substantial protein but also high sodium; best enjoyed occasionally rather than as an everyday meal.

High saturated fat. Chorizo and cheddar contribute a large amount of saturated fat, which is notable for heart health.

Protein-rich. The chorizo and cheese provide a good protein hit per serving, supporting fullness and muscle repair.

Sodium concern. Processed chorizo, cheese and salsa together make this a high-salt meal, which may be unsuitable for those watching blood pressure.

Method

  1. Slice the chorizo sausages, then cook in a dry frying pan over a medium heat until browned and the fat has rendered. Transfer to a plate.
  2. Place one tortilla in the pan, then scatter over half the cheese and chorizo. Add a little more cheese on top, then cover with a second tortilla.
  3. Cook for 2–3 minutes until the underside is golden, then carefully turn and cook the other side until crisp and the cheese has melted.
  4. Repeat with the remaining tortillas and filling.
  5. Cut into wedges and serve hot with the sauce for dipping.
