Why this works
A moderate-to-high energy breakfast with a useful protein boost from eggs and yoghurt, but fairly high in sugars and refined carbohydrate depending on the bread used.
Vitamin C and fibre from pears. Pears contribute fibre for digestive health, plus vitamin C and potassium, though most is retained best when the fruit is left unpeeled.
Protein from eggs and yoghurt. Eggs and yoghurt provide complete protein, which helps with satiety and muscle maintenance.
Sugar and energy density. Honey and pears raise the natural and added sugar content, so this dish may be less suitable for those watching blood glucose or total sugar intake.
Method
- Peel, core and slice the pear.
- Whisk the eggs with the yoghurt in a shallow bowl until smooth.
- Dip the bread slices into the mixture, coating both sides.
- Cook the toast in a lightly oiled pan over medium heat for 2–3 minutes on each side until golden.
- In a separate pan, soften the pear slices with the honey for 3–4 minutes.
- Serve the French toast topped with the warm pears and any remaining honey.
