Why this works

A satisfying, protein-rich omelette that is relatively low in carbohydrate but fairly high in saturated fat and sodium due to the cheese, margarine and added salt.

High-quality protein. Eggs and cheddar provide a substantial protein hit, supporting satiety and muscle maintenance.

Micronutrients. Eggs and cheese contribute vitamin B12, iodine and selenium, while the sweet pepper adds vitamin C and carotenoids.

Saturated fat and sodium. Mature cheddar, margarine and added salt increase saturated fat and sodium, so this is best enjoyed in moderation if heart health is a priority.

Method

  1. Slice the sweet peppers into thin strips.
  2. Beat the eggs in a bowl with a pinch of salt and a little black pepper.
  3. Melt the margarine in a non-stick frying pan over a medium heat, then add the sweet peppers and cook for 3-4 minutes until softened.
  4. Pour in the beaten eggs and swirl the pan so the mixture spreads evenly.
  5. Cook gently until the base is set, then scatter over the mature Cheddar cheese.
  6. Fold the omelette in half and cook for another minute until the cheese has melted and the centre is just set.
  7. Slide onto a plate and serve immediately.
