Why this works

A protein-rich, relatively low-carbohydrate salad, but it is also fairly high in fat and sodium because of the bacon and coleslaw.

High-quality protein. Eggs and Greek yoghurt provide complete protein, supporting satiety and muscle maintenance.

Sodium and saturated fat. Bacon is the main contributor to sodium and saturated fat, so this dish is best enjoyed in moderation if you are watching blood pressure or heart health.

Micronutrients from eggs. Eggs contribute vitamin B12, vitamin D and selenium, which support energy metabolism and immune function.

Method

  1. Place the eggs in a pan, cover with cold water, and bring to the boil. Simmer for 9–10 minutes, then cool under cold running water, peel, and chop.
  2. Meanwhile, cook the bacon in a frying pan over a medium heat until crisp. Drain on kitchen paper, then chop or crumble it.
  3. In a bowl, mix the Greek yoghurt with black pepper to make a light dressing.
  4. Fold in the chopped eggs, bacon, and coleslaw until everything is evenly coated.
  5. Taste and add a little more black pepper if needed, then serve straight away or chill for 15 minutes for a firmer salad.
