Why this works

Rich, energy-dense dish with high protein and very high saturated fat and sodium, best enjoyed occasionally rather than as an everyday meal.

Protein from eggs and cheese. Provides a useful amount of complete protein for satiety and muscle repair, with around 22 g per serving.

High saturated fat and sodium. Chorizo, cheese, butter and crisps contribute significant saturated fat and salt, which may be a concern for heart health if eaten often.

Micronutrient contribution from eggs. Eggs provide vitamin B12, vitamin D and choline, supporting nerve function and normal energy metabolism.

Method

  1. Remove the chorizo from the sausages and slice or crumble it finely.
  2. Melt the butter in a frying pan over a medium heat and cook the chorizo for 3-4 minutes until the fat has rendered and it is lightly crisp.
  3. Beat the eggs in a bowl until just combined, then pour them into the pan with the chorizo.
  4. Stir gently with a spatula, scraping the base of the pan, until the eggs are softly scrambled and nearly set.
  5. Scatter in the cheese and fold through for 30 seconds until melted.
  6. Crush the crisps lightly and sprinkle over the top just before serving for crunch.
