Why this works
A rich, protein-dense bake that is high in saturated fat and sodium, with relatively low carbohydrate content.
High-quality protein. Eggs, chorizo and cheddar provide a substantial amount of protein, which supports satiety and muscle maintenance.
High saturated fat and sodium. Chorizo, cheddar and added salt make this dish particularly high in saturated fat and salt, which may not suit frequent consumption.
Some micronutrients from vegetables. Tomatoes, red onion and garlic contribute vitamin C, antioxidants and small amounts of fibre, though the overall vegetable content is modest.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
- Slice the chorizo sausages and red onion, and finely chop the garlic.
- Heat a large ovenproof frying pan over a medium heat and cook the chorizo for 2-3 minutes until the oil starts to release.
- Add the red onion and cook for 4-5 minutes until softened, then stir in the garlic for 1 minute.
- Add the tomatoes, season well, and simmer for 8-10 minutes until the sauce has thickened slightly.
- Make 4 small wells in the sauce, crack in the eggs, and scatter the cheese over the top.
- Transfer to the oven and bake for 8-10 minutes, or until the egg whites are just set and the yolks are still a little soft.
- Serve immediately.
