Why this works

Rich, savoury tartlet filling with moderate protein but high saturated fat and energy from eggs, cheese, cream and butter.

Protein and B vitamins. Eggs and cheese provide useful protein, plus B12 and riboflavin, supporting muscle maintenance and energy metabolism.

Calcium-rich. Cheese and milk contribute calcium for bone health, though the amount is balanced by the higher saturated fat content.

Low fibre, low vegetable content. This filling is only modest in fibre and micronutrient diversity despite the small salad component, so it is not very gut-friendly on its own.

Method

  1. Heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and butter a small tart dish or ramekins.
  2. Whisk the eggs, single cream and milk together, then stir in the cheese and a little balsamic vinegar.
  3. Add the salad and pour the mixture into the dish.
  4. Bake for 15-18 minutes until just set and lightly golden, then rest briefly before serving.
