Why this works

A rich, protein-containing dish that is low in carbohydrate but high in saturated fat and energy, so best enjoyed as an occasional meal rather than an everyday lighter option.

Good protein from eggs and cheese. Eggs and cheese provide a useful amount of high-quality protein, supporting satiety and muscle maintenance.

Source of fat-soluble nutrients. Eggs and dairy contribute vitamins A and B12, plus some vitamin D and calcium, although amounts vary.

High in saturated fat. Single cream, cheese and butter push saturated fat quite high, which may be less suitable for heart-health-focused diets.

Method

  1. Heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).

Let the oven come fully up to temperature before the dish goes in so the eggs start setting immediately rather than warming slowly and turning rubbery.

  2. Butter a small baking dish and spread the salad over the base.

Use the butter to coat the corners and sides as well as the base, and press the salad down lightly so it forms an even layer and does not scorch where it sits proud of the dish.

  3. Crack the eggs on top, then pour around the single cream and scatter over the cheese.

Keep the cream around the edges rather than pouring it over the yolks, and crack each egg into a small cup first in case of shell fragments or a broken yolk.

  4. Bake for 12-15 minutes until the whites are set and the yolks are still soft, then serve straight away.

Watch for the whites to turn opaque and just firm at the surface while the yolks still wobble slightly when the dish is nudged; if the cheese is browning too quickly, loosely cover with foil for the last few minutes.
