Why this works

A simple, moderately high-protein dish with some saturated fat and moderate sodium from the tomato sauce.

Egg protein and micronutrients. Eggs provide complete protein, plus vitamin B12, selenium and choline, which support energy metabolism and brain health.

Tomato-based antioxidants. Tomato sauce contributes lycopene and vitamin C, which are linked with antioxidant support and heart health.

Sodium can vary. Canned or jarred tomato sauces can be relatively high in salt, so the sodium content may be higher depending on the brand.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Pour the tomato sauce into a small ovenproof dish or skillet and warm it over a medium heat until bubbling.
  3. Use a spoon to make two small wells in the sauce, then crack the eggs into the wells.
  4. Transfer the dish to the oven and bake for 8-10 minutes, until the egg whites are set but the yolks are still soft, or cook longer if you prefer firmer yolks.
  5. Serve straight away while hot.
