Why this works

A protein-rich, savoury skillet with relatively low carbohydrates, but it is fairly high in saturated fat and sodium due to the bacon and eggs.

High-quality protein. Eggs, bacon and Greek yoghurt provide a substantial protein boost for satiety and muscle repair.

Vitamin C from pepper. The orange pepper adds vitamin C and antioxidant carotenoids, which support immune function and help with iron absorption.

Saturated fat and sodium. Bacon contributes notable saturated fat and salt, so this dish is best enjoyed occasionally if you are watching heart health or blood pressure.

Method

  1. Cook the bacon in a skillet until just crisp, then remove and set aside.

Keep the heat at medium so the fat renders without scorching, and lift the bacon out when it is still a little flexible as it will firm up as it cools.

  2. Add the orange pepper to the pan with a little butter and cook for 4-5 minutes until softened.

Let the butter foam and settle before adding the pepper, then stir only occasionally so the pieces soften at the edges without catching and going bitter.

  3. Return the bacon to the pan, make 4 small wells and crack in the eggs.

Use the back of a spoon to make the wells deep enough to hold each egg, and crack them in close to the pan so the yolks stay intact.

  4. Cover with a lid and cook gently for 4-6 minutes until the whites are set and the yolks are cooked to your liking.

Aim for a very low heat under the covered pan; if the lid steams heavily, briefly lift it so the whites set without the bottoms turning rubbery.

  5. Serve with a spoonful of Greek natural yoghurt on top.

Dollop the yoghurt on just before serving so it stays cool and tangy, and avoid stirring it in or it will lose its contrast against the warm skillet ingredients.
