Why this works

A protein-rich breakfast with relatively low carbohydrate content, but it is also high in saturated fat and sodium due to the bacon.

High-quality protein. Eggs and bacon provide a substantial protein boost, supporting fullness and muscle maintenance.

Vitamin C and antioxidants. Tomatoes, lime and coriander contribute vitamin C and protective plant compounds, though in modest amounts per serving.

High sodium and saturated fat. Bacon contributes notable sodium and saturated fat, which may make this less suitable as an everyday heart-healthy option.

Method

  1. Heat a frying pan over a medium heat and cook the bacon until crisp. Remove and set aside, leaving a little of the fat in the pan.

Keep the heat at a steady medium rather than high so the bacon renders before it scorches, and lift it out when the fat has turned golden and the edges are properly crisp.

  2. Add the chopped tomato to the pan and cook for 4-5 minutes until softened and slightly saucy. Season with black pepper.

Let the tomatoes hit the hot fat and sit briefly before stirring so they break down into a glossy sauce; if they look watery, increase the heat slightly to drive off excess liquid, but avoid browning them.

  3. Crack the eggs into the pan, cover with a lid and cook until the whites are set but the yolks are still soft.

As soon as the lid traps the steam, lower the heat a touch so the whites turn opaque from the edges inwards without rubbery tops, and remove the pan when the yolks still wobble softly in the centre.

  4. Return the bacon to the pan, scatter over chopped coriander and finish with lime juice. Serve immediately.

Add the coriander at the very end so it stays bright and fresh, and squeeze in just enough lime to sharpen the dish without making the tomatoes taste sour.
