Why this works

A protein-rich, moderately high-fat baked egg dish with low carbohydrate content; best suited to a filling meal, but the cheese and added salt push saturated fat and sodium upwards.

Protein and B vitamins. Eggs and cheese provide high-quality protein, plus vitamin B12 and riboflavin, which support energy metabolism.

Calcium. Mozzarella and cheddar contribute useful calcium for bone and dental health.

Sodium and saturated fat. Cheese, salsa and added salt make this dish relatively high in sodium, while the cheese contributes most of the saturated fat.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Spoon the hot salsa into a small baking dish and spread it into an even layer.
  3. Make four small hollows in the salsa, then crack the eggs into them.
  4. Season lightly with salt and black pepper.
  5. Scatter over the mozzarella and cheddar cheese.
  6. Bake for 12–15 minutes, until the egg whites are set and the yolks are still soft, and the cheese is melted and bubbling.
  7. Serve straight away while hot.
