Why this works
A protein-rich, fairly high-fat baked egg dish that is moderate in carbohydrates but quite high in sodium and saturated fat.
High-quality protein. Eggs and mozzarella provide complete protein, supporting satiety and muscle maintenance.
Sodium content. The salsa dip is likely the main source of salt, making this dish relatively high in sodium per serving.
Saturated fat. Mozzarella and butter contribute a notable amount of saturated fat, which is worth moderating if eaten regularly.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
Use the middle shelf so the heat circulates evenly and the oven has fully reached temperature before the dish goes in; a properly preheated oven helps the whites set cleanly without overcooking the yolks.
- Butter a small ovenproof dish generously, then spoon in the hot salsa dip and spread it into an even layer.
Warm the dish first so the butter melts on contact, then tilt it to coat the corners and sides right up to the rim; any dry patches can make the salsa catch and stick.
- Make four small wells in the salsa, then crack the eggs into the wells.
Make the wells deep enough to cradle each egg without the whites spreading too far, and crack each egg into a small cup first to avoid broken yolks or shell fragments.
- Scatter the mozzarella cheese over the top.
Keep the cheese fairly even but do not pack it down, as a dense layer can trap steam and turn the top oily instead of nicely molten.
- Bake for 12–15 minutes, until the egg whites are just set and the mozzarella is melted and bubbling.
Check at the 12-minute mark for opaque whites and yolks that still wobble slightly when the dish is nudged; if the top is browning too quickly, loosely cover with foil for the final few minutes.
- Rest for 2 minutes before serving straight from the dish with the buttery salsa spooned over the top.
Let the dish stand briefly so the molten salsa settles and the eggs finish firming from residual heat, which makes serving neater and prevents the whites from tearing as you spoon it out.
