Why this works

A protein-rich, fairly energy-dense skillet with moderate carbohydrate, high saturated fat and a notable sodium load from the cheese, butter and salsa.

Protein and calcium. Eggs, mozzarella and Greek yoghurt provide a solid protein contribution and useful calcium for bone health.

Vitamin C and antioxidants. Red bell pepper and salsa add vitamin C and plant compounds that support immune function.

Saturated fat and sodium. Butter, mozzarella and salsa contribute a relatively high saturated fat and sodium content, which may be less suitable for frequent consumption.

Method

  1. Slice the red bell pepper into thin strips.

Aim for thin, even strips so they soften at the same rate; if any pieces are much thicker, they can stay crunchy while the rest turns tender.

  2. Melt the butter in a frying pan over a medium heat, then add the red bell pepper and cook for 4–5 minutes until softened.

Keep the heat at a steady medium so the butter foams gently rather than browning too fast, and stir just enough to stop the pepper from catching on the pan base.

  3. Stir in the hot salsa dip and cook for 1 minute to warm through.

Stir until the salsa looks glossy and begins to bubble at the edges, but do not let it boil hard or it may reduce too much and turn salty.

  4. Use the back of a spoon to make two small wells in the mixture, then crack in the eggs.

Make the wells deep enough to cradle each egg so the whites stay in place; crack the eggs one at a time into a small cup first if you want to avoid shell fragments.

  5. Cover the pan and cook gently for 4–6 minutes, until the egg whites are set but the yolks are still runny, or cook a little longer if you prefer them firmer.

Lift the lid briefly towards the end to check that the whites are opaque all the way round and no longer translucent; if the pan is too hot, the bases can overcook before the tops set.

  6. Scatter over the mozzarella cheese, cover again for 1 minute, and let it melt into the sauce.

Scatter the mozzarella evenly so it melts in patches across the skillet, and keep the lid on just until the cheese is soft and stretchy rather than fully browned.

  7. Take off the heat and spoon the Greek yoghurt over the top before serving.

Add the yoghurt off the heat so it stays cool and tangy, and spoon it on in dollops rather than stirring through if you want to avoid splitting the sauce.
