Why this works

A vegetable-based side dish that is fibre-rich and relatively low in calories, but the added salt makes the sodium content quite high.

High in fibre. Cauliflower and green beans provide a good amount of dietary fibre, supporting satiety and digestive health.

Vitamin C and antioxidants. Cauliflower and lemon contribute vitamin C, while green beans provide additional antioxidant plant compounds.

Sodium concern. 1 tsp of salt across 2 servings makes this dish relatively high in sodium, which may be a consideration for blood pressure.

Method

  1. Heat the oven to 220°C (Fan 200°C, 428°F, Gas Mark 7). Cut the cauliflower into florets and trim the green beans.
  2. Toss the cauliflower and green beans with olive oil, salt and black pepper if using, then spread on a baking tray.
  3. Roast for 18-20 minutes, turning once, until the cauliflower is browned at the edges and the beans are tender.
  4. Grate over a little lemon zest and squeeze over the lemon juice just before serving.
