Why this works

A protein-rich, moderately calorie-dense stuffed pepper dish with a good amount of calcium, but relatively high saturated fat from the cheddar and modest fibre.

Vitamin C from peppers. Orange peppers provide a useful boost of vitamin C and carotenoids, supporting immune function and antioxidant intake.

Calcium and protein. Cottage cheese and cheddar contribute substantial protein and calcium for muscle maintenance and bone health.

Saturated fat consideration. Extra mature cheddar raises saturated fat, so portion size matters if you are watching cholesterol or overall saturated fat intake.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).

Let the oven fully come up to temperature before the peppers go in, so the filling starts heating straight away rather than stewing in a lukewarm oven.

  2. Halve and deseed the orange pepper, then place it in a small baking dish.

Keep the pepper halves cut-side up and level in the dish so the filling stays put; if they wobble, trim a sliver from the base rather than forcing them over.

  3. Mix the cottage cheese with the grated cheddar.

Grate the cheddar finely so it distributes evenly through the cottage cheese, and stir just until combined to avoid breaking the curds into a watery mixture.

  4. Spoon the filling into the pepper halves and bake for 20-25 minutes until tender and lightly golden.

Bake on the middle shelf and look for the pepper edges to soften and take on a slight wrinkle while the cheese turns pale golden rather than deeply browned.

  5. Serve warm.

Rest the baked peppers for a minute or two before serving so the filling firms slightly and does not spill out when lifted.
