Why this works

A light, vegetable-based soup that is relatively low in calories and fat, but it is very high in sodium due to the added salt.

Vitamin A from carrots. Carrots provide beta-carotene, which the body converts to vitamin A, supporting vision, skin and immune health.

Vitamin C from cauliflower and lemon. Cauliflower and lemon contribute vitamin C, an antioxidant that supports collagen formation and immune function.

High salt content. 1 tsp of added salt raises sodium markedly, making this unsuitable for those limiting salt or managing blood pressure.

Method

  1. Chop the carrots and cauliflower into small pieces so they cook quickly.
  2. Place them in a saucepan with water, salt, and a little oil if using. Simmer for 15-18 minutes until very tender.
  3. Blend until smooth, adding a splash more water if needed to loosen the soup.
  4. Stir in lemon juice to taste and serve hot.
  5. If desired, top with a little black pepper before serving.
