Why this works

Moderate in energy and carbohydrate, but fairly high in fat and sodium due to frying oil and added salt.

Potassium from potatoes. Potatoes provide useful potassium, which supports normal blood pressure and muscle function.

Spices and herbs. Cumin, coriander, turmeric and fresh coriander contribute small amounts of antioxidants and add flavour without many calories.

Sodium is notable. 1 tsp salt across 4 servings makes this a higher-sodium dish, which may not suit those limiting salt intake.

Method

  1. Boil the potatoes in salted water until tender, then drain well and mash until smooth.
  2. Finely chop the red onion, fresh coriander and green chilli, then mix into the mashed potatoes with cumin seeds, ground coriander, garam masala, turmeric, plain flour and salt.
  3. Shape the mixture into small round patties and chill for 10 minutes if you have time.
  4. Heat a shallow layer of vegetable oil in a frying pan over a medium heat.
  5. Fry the patties for 3 to 4 minutes on each side until golden and crisp.
  6. Drain on kitchen paper and serve hot with chutney and a squeeze of lemon.
