Why this works

A light, vegetable-based side dish that is low in calories and sodium, with good fibre and very little saturated fat.

High in vitamin C. Cauliflower, tomatoes and lemon all contribute vitamin C, supporting immune function and collagen formation.

Fibre-rich vegetables. Cauliflower provides useful fibre, which can aid digestive health and help with satiety.

Heart-friendly fat profile. Most of the fat comes from the added oil, with only a small amount of saturated fat in the dish.

Method

  1. Break the cauliflower into small florets and halve or chop the tomatoes.
  2. Heat oil in a large frying pan, then cook the cauliflower for 6-7 minutes until beginning to colour.
  3. Add the tomatoes and a splash of water, then cover and cook for 8-10 minutes until the cauliflower is tender.
  4. Finish with lemon juice and season to taste before serving.
