Why this works

High in protein and very low in carbohydrate, but relatively high in saturated fat and sodium due to the ham, cheese and butter.

Protein-rich eggs and ham. Provides a substantial protein hit per serving, which supports satiety and muscle repair.

Calcium from cheese. Cheese contributes calcium for bone health, though it also adds saturated fat and salt.

High sodium consideration. Cooked ham and cheese can make this dish fairly salty, which may be a concern for those watching blood pressure.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).
  2. Grease two small ovenproof dishes with the unsalted butter.
  3. Divide the cooked ham between the dishes and spoon a little mustard over the ham.
  4. Slice the cheese slices and arrange them on top of the ham.
  5. Crack the eggs into the dishes, taking care not to break the yolks.
  6. Season lightly if desired, then place the dishes on a baking tray and bake for 10–12 minutes, until the whites are just set and the yolks are still soft.
  7. Serve immediately while the cheese is melted and bubbling.
