Why this works

A protein-rich, low-carbohydrate baked egg dish that is filling but relatively high in saturated fat from cheese and butter.

High-quality protein. Eggs provide complete protein, supporting satiety and muscle maintenance.

Calcium and B12. Cheddar contributes calcium for bone health and vitamin B12 for red blood cell and nervous system function.

Saturated fat and sodium. Cheese and butter increase saturated fat, while cheddar also adds sodium, so portions matter if watching heart health.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).

Let the oven come fully up to temperature before the dishes go in so the eggs begin cooking evenly rather than sitting in a lukewarm oven and drying out.

  2. Lightly butter two small ovenproof dishes.

Use the butter to coat the base and sides in a thin, even film, leaving no dry patches so the eggs release cleanly after baking.

  3. Split the eggs between the dishes.

Tip the eggs in gently so the yolks stay intact if you want a neater finish; if one breaks, it will set faster and give a more custardy centre.

  4. Dot each dish with a little mustard and top with pieces of cheddar slice cheese.

Keep the mustard in small dots away from the very edge of the dish so it does not scorch, and tear the cheese into pieces that cover the top without forming one thick lid.

  5. Bake for 10-12 minutes until the whites are set and the cheese is melted.

Watch for the whites turning opaque and just wobbling in the centre, because they will carry on setting from the residual heat once removed from the oven.

  6. Serve straight away while hot.

Plate immediately so the cheese stays soft and the yolks remain tender; even a short delay will let the eggs firm up and lose their glossy finish.
