Why this works

A rich, savoury baked dish that is relatively high in energy, protein and saturated fat, with moderate carbohydrates and a fairly high sodium level.

Calcium and protein from cheese and milk. The cheese and milk contribute useful protein plus calcium for bone health, though they also raise saturated fat.

B vitamins and choline from eggs. Eggs add vitamin B12, riboflavin and choline, supporting energy metabolism and normal neurological function.

Sodium is fairly high. The added teaspoon of salt, along with cheese and bread, makes this dish relatively high in sodium per serving.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4) and lightly grease a medium baking dish.
  2. Cut the bread into chunks and spread half into the dish. Scatter over half of the cheese, then repeat with the remaining bread and cheese.
  3. In a bowl, whisk together the eggs, milk, Dijon mustard, salt and black pepper until well combined.
  4. Pour the egg mixture evenly over the bread and cheese, pressing down lightly so the bread starts to absorb the liquid.
  5. Scatter over the spring onions and parsley, dot with butter, then leave to stand for 10 minutes.
  6. Bake for 25–30 minutes until puffed, golden and set in the centre. Rest for 5 minutes before serving.
