Why this works

Rich, savoury fritters that are energy-dense and high in saturated fat and sodium, with a moderate protein contribution.

Protein and calcium from eggs and cheese. Eggs and cheese contribute useful protein, plus calcium for bone health, though the cheese also raises saturated fat.

Carotenoids and fibre from sweetcorn. Sweetcorn provides fibre and plant compounds such as lutein and zeaxanthin, which support eye health.

High sodium and saturated fat from chorizo, cheese and added salt. Chorizo and cheese are the main contributors to sodium and saturated fat, making this a less heart-friendly option.

Method

  1. Heat a little vegetable oil in a frying pan and cook the chorizo sausages until browned and cooked through. Remove, cool slightly, then chop into small pieces.
  2. In a bowl, whisk the eggs with the mayonnaise and fruit juice until smooth.
  3. Stir in the sweetcorn, grated cheese, chopped chorizo, plain flour, baking powder, sliced spring onions, salt and black pepper until you have a thick fritter batter.
  4. Heat vegetable oil in a frying pan over medium heat. Spoon in portions of the mixture and flatten slightly.
  5. Cook for 2–3 minutes on each side until golden brown, crisp, and cooked through. Drain on kitchen paper.
  6. Mix a little extra mayonnaise with a splash of fruit juice and citrus zest to make a quick dip, then serve alongside the fritters.
