Why this works

A rich, energy-dense pasta bake that is high in saturated fat and sodium, with moderate protein and some fibre from the sweet potato.

Good protein and calcium. Cheddar and chorizo provide a useful protein hit, and the cheese contributes calcium for bone health.

Vitamin A from sweet potato. Sweet potato adds beta-carotene, which the body converts to vitamin A, supporting vision and immune function.

High salt and saturated fat. Chorizo, cheddar, butter, cream and added salt make this dish quite high in sodium and saturated fat.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6). Peel the sweet potato and cut it into 2 cm cubes, then spread on a baking tray, season with salt and black pepper, and roast until tender and lightly caramelised.
  2. Meanwhile, slice the chorizo and cook it in a dry frying pan until the fat renders and the edges turn crisp. Lift out with a slotted spoon and set aside, leaving the flavoured oil in the pan.
  3. Cook the macaroni in plenty of salted water until just tender, then drain well.
  4. In a saucepan, melt the butter over a medium heat. Stir in the cream and a little of the reserved chorizo oil, then add the cheese and whisk until melted into a smooth sauce. Season with salt and black pepper.
  5. Fold the drained macaroni, roasted sweet potato and cooked chorizo into the cheese sauce until evenly coated.
  6. Transfer to a baking dish and bake for 10 minutes, or until bubbling and golden on top.
  7. Serve hot straight from the oven.
